After I put the babies to bed, Addison and I made a chocolate zucchini cake, with two huge zucchinis we picked from the garden.
He did the grating....
and there you have it. The worlds best chocolate cake. You must try it, the picture does not do it justice.
Chocolate Zucchini cake:
1 stick of margarine
1/2 C. oil
1 3/4 C. sugar
2 eggs
1/2 C. buttermilk
2 1/2 C. flour
1 tsp soda
1/2 tsp powder
1/2 tsp salt
1 tsp cinnamon
2 C. grated zucchini
1 C. chocolate chips (this is not enough for us.....I use the whole darn bag!)
Cream marg, oil and sugar. Beat in eggs, blend vanilla and buttermilk. Add dry ingred to creamed mixture, stir in half c. chips. Pour into 9x13 greased pan, sprinkle rest of chips on top. Bake 325 for 1 hr.
This recipe has been in our family for a long time....and what do you know, I didn't even have to get my recipe card to write this down.

Hi! I think I will make this zuchini chocolate cake for my next bookclub! I was just given a big ol' zuchini and hadn't gotten around to making my bread! Chocolate is a much better idea - especially when you are talking a women's bookclub!!!!
