A few years ago my sister Rachel had me to dinner and made the best potato soup! It is good and creamy and I make a big pot every year. Today was the day.
It is a quick and easy recipe and great if you make it the day before you plan to serve it, because it just tastes even better the next day.
4-6 large potatoes
6 stalks celery
1 large onion
1 pint cream
1 cup milk
1 pack cream cheese
pepper, salt and dill to taste
In a large pot bring two inches of water to a simmer, chop potatoes, onion and celery and simmer for 1/2 hour covered.
Add cream and milk, let warm up, then cut cream cheese into cubes add, then salt, pepper and dill to taste. Simmer another 10-20 minutes ( uncovered )
If cream cheese is not all the way melted, mash against side of the pot.
Great with your favorite crusty bread, and even better served the next day!
