We killed the Christmas cookies. They are gone. Not even a flake of coconut to be had.
So, of course we had to make something for the cake plate...
Wacky Chocolate cupcakes. I usually make this recipe into a sheet cake, but decided to try cupcakes, because I felt the need to make some pink frosting.
Wacky Chocolate cake:
3 c. flour
2 c. sugar
2/3 c. cocoa
2 tsp soda
2 tsp vinegar
2 tsp vanilla
1 c. oil
2 c. water
Mix together and pour into greased 9x 13 cake pan, or muffin tins and bake at 350 for about 40 minutes.
Note: this is a very moist cake, and I have tried 100 times to make it into a layer cake..it just doesn't work.
These won't last long!
