More summer cooking

There is something about summer cooking that I love. I do try to make things easier, quicker, and lighter, but still, summer cooking is so enjoyable for me. Yummy things are in season, and the fruits, veggies and fresh herbs smell so good.

Tonight we are having one of our favorite salads. I got the recipe a few years ago while watching a cooking show, but I can not remember where I got it.
1 pint of grape tomatoes
1 block of feta cheese
1 bunch of Italian parsley
1/4 of a purple onion, (today I used chives from the garden instead)
Chop up parsley, onion, and feta and mix in a bowl.
Mix 1/4 C. olive oil with 2 tablespoons red wine vinegar, add salt and pepper and mix, then pour over salad.
You can serve right away, but I like it after it has been sitting all day, so I make it in the morning.

It is yummy with this quick marinade:

1/2 C. Italian dressing
1/4 C. soy sauce
1/4 tsp ginger
1/2 tsp sugar
Stir and marinade on chicken, or fish for at least 2 hours.

And, a yummy raspberry, rhubarb pie. I didn't follow a recipe here. I just had 2 pints of raspberries, and mixed them with three cups of chopped rhubarb, 1 C. sugar, and 2 Tablespoons of flour, mix, let stand for 15 minutes, pour into pie crust, and bake at 475 for 15-20 minutes.

It looks (and sounds) like something I have in my "My Recipes" box on Foodtv. Ina Garten (Barefoot Contessa) has a tomato-feta salad recipe, EXCELLENT with a lemon-rosemary chicken, btw...I've used it several times before, and you are right, it is good to have with a chicken....

MMMmmm is SOOO right!
