Amazing

For three years now, we have had a vegetable garden. Every memorial day weekend, we plant it and I always have my doubts. Really now, it seems too easy. We get some compost, plant some seeds, water, and we get lots of yummy stuff. I am always impressed that it actually works.

Amazing, I think. Green beans are our favorite, roasted, with sea salt, olive oil, and sesame seeds. We love the sugar snap peas too, but they never make it to the dining room table. They make a very good afternoon snack.
To watch the kids enjoy the whole process is pretty amazing too. Lots of excitement, and a bit of yelling at the first sign that something is growing.
We don't grow enough of anything to can, just enough to make lots of chocolate zucchini cake, have lots of roasted green beans, and some yummy afternoon snacks.
It's just right.

it is amazing, isn't it? I just picked my first yellow squash today and I am so excited to use it in stir fry tonight for supper. our green beans are still tiny, but I suspect that in a week we'll be eating them, too. I can't wait.

I completely agree. Every year I'm just tickled that I can grow something. And amazed at how much I can grow. It just doesn't seem like it should be possible!

I never would have thought of roasting beans - I must try them tonight - sounds delicious!!
