The BEST muffin recipe

One of my favorite treats is a big muffin. I love them, all kinds of them. They are expensive though, and we eat quite a bit of them. I have thought for over a year now, I should just make a bunch every week, but I have not been motivated.
I was looking for a chocolate chip muffin recipe, did not find one, but found a blueberry recipe I decided to try. They came out nice and perfect, all the same size, ah...just beautiful.
My husband actually said " You did not make these! You got them at the store!"
Let's just say, for some reason, I have never made a good batch of muffins. I don't know why.

So here it is, a really easy, quick muffin recipe. You won't be disappointed.

2 C flour
3/4 C. sugar
1 tsp. salt
3 tsp. baking powder
1/2 tsp. cinnamon
1 egg
1/4 C. oil
1 1/4 C. milk
2 C. berries or chocolate chips (I mixed my chocolate chips with 1 tablespoon if flour before I added them)

Beat sugar oil and egg, add dry ingredients and milk, fold in fruit or chocolate chips, bake 375 for 25 minutes. Makes on dozen muffins.

They are good for breakfast, yummy for dessert, but we like them best as a mid morning snack, with a cold glasss of lemonade.

Those do sound yummy. I love muffins - but rarely take the time to make them. I know what I'll be making this weekend though.

I am a big muffin fan too. I made strawberry yesterday (from a mix) and banana nut today, I actually used some of the banana nut batter for a few pancakes too. (Delicious but SOO rich). I will have to dig out my best recipe, from a bakery in Lake of the Ozarks, Missouri. It's for Macintosh muffins, apples, pecans or walnuts, coconut. Very chunky, hearty muffins.

PS: In our house we call muffins "cupcakes" because we have a cat named Muffin and that is wayyy too confusing to a little 2 yr old.

I love making muffins as they are really quick and perfect for the school lunch box. Your recipe is quite similar to mine but less oil so I'll be giving it a go very soon. I just made some chocolate with choc chip ones yesterday and added some orange zest - mmmmm yummy. I love the idea of a muffin and lemonade - and I just know my girls would too.

Katie, tried these and you're right. They are the BEST muffins. My kids weren't too thrilled, they're too used to Betty Crocker's, but I'll win them over for sure! ;)

i have a wonderful recipe for lemon muffins and i adapt the recipe to suit my mood - i take out the lemon rind and add raspberries and white chocolate, or put in cocoa and choc chips, or sometimes i use brown sugar and make them caramelly. yum. nothing's better than a muffin and they are super great for lunches - i freeze them and pop them into lunch boxes.

It is very hard to find a good blueberry muffin recipe - they are usually too biscuity. I'll have to try these.

I just wanted to let you know I tried this recipe last week after seeing it here, and I did change it a little bit to better use what I had, but they really came out quite good! I froze them and have been defrosting one for myself for breakfast every morning. I posted my changes to the recipe on my blog, if you wanted to see.
