A little weeding, painting, and planting more herbs. We could hear our neighbors doing the same thing, and decided to have them over for cheeseburgers, and peach pie.
I do love working outside, getting things done, working up a sweat, and an appetite. There is nothing like taking a cold shower after though, and putting on your favorite summer dress for dinner.
This was the first peach pie I have made. I have been wanting to do it for years, but I just never have. It was worth the wait.
Favorite pie crust recipe, or frozen pie crust
5 to 6 cups peaches, peeled and quartered ( blanch the peaches first for super easy peeling )
1/2 cup crown sugar
1 1/2 tablespoons cornstarch
1/4 tsp cinnamon
1/8 tsp nutmeg
Stir peaches gently with above ingredients until well coated, poor in pie shell. Add top crust, poke holes and sprinkle with cinnamon and sugar.
Bake at 450 for 20 minutes, then 350 for 35-45 minutes.
