This has been our favorite combination so far, fresh mozzarella, tomatoes, basil, salt and pepper, oil and vinegar. It is good as a salad, as an appetizer, and on a pizza.
Beets! Yummy! I never thought I liked beets until I went to a friend's for dinner and she made a roasted beet salad.
Roast beets with olive oil (this can take up to an hour in the oven, cover with foil and check often)
Caramelize one white onion, toast walnuts or pecans.
Toss all ingredients together with a touch of red wine vinegar.
While the salad is still warm, add some goat cheese, it gets all gooey and delicious.
Also, fresh herbs like thyme, rosemary, and chives are so yummy mixed in with goat cheese and spread on crackers, with a glass of wine.
