They come all at once

Doesn't it seem like all the vegetables are ready to be picked and eaten all at once? Between our garden, the neighbors garden, and the farmers market we have been so spoiled. We usually have meat or fish every night for dinner, and lately instead of having one veggie side dish, we have been having two or three.


This has been our favorite combination so far, fresh mozzarella, tomatoes, basil, salt and pepper, oil and vinegar. It is good as a salad, as an appetizer, and on a pizza.


Beets! Yummy! I never thought I liked beets until I went to a friend's for dinner and she made a roasted beet salad.
Roast beets with olive oil (this can take up to an hour in the oven, cover with foil and check often)
Caramelize one white onion, toast walnuts or pecans.
Toss all ingredients together with a touch of red wine vinegar.
While the salad is still warm, add some goat cheese, it gets all gooey and delicious.
Also, fresh herbs like thyme, rosemary, and chives are so yummy mixed in with goat cheese and spread on crackers, with a glass of wine.

Those look so yummy - especially the roasted beets - I'll have to give that one a try. We've been eating (and preserving) veggies out the wazoo around here. I've never had goat cheese, but that looks good!

You have a super awesome upbeat blog. I have missed for awhile and glad to see you are still blogging. We planted a tiny garden and have loved the rewards. Shallots, tomatoes, okra, green beans, carrots and a couple of pumpkins. There is a book by the Ball jar company about preserving by freezing and others. Pretty cool and I think I bought at Walmart a long time ago. Our best recipe so far is cooked green beans dipped in homemade spaghetti sauce. Our 5 year old came up with that one. Happy harvest to you.

I use the tomatoes (chopped) and basil with blue cheese, or gorgonzola, olive oil and salt - bruschetta! And since I'm too lazy too toast french bread in the oven in summer, I serve it with crackers (I prefer the saltiness of saltines), but you could experiment with other kinds. Delicious, easy and fast.

We love both of those dishes. The tomato/mozza/basil combo is eaten often around here. Another one I love in the summer time is roasting cut up zucchini and squash with a little olive oil, garlic, salt and pepper - yum!

Your receipes sound great. I wished we had room to grow veggies. Perhaps next year a few less flowers and some veg.

You just reminded me that I have beets in the fridge from my mom's garden. She grew a MILLION.

It's fantastic.

Anyway, I'll be having these tonight per my mom's Quickie Beets method of microwaving (don't scream) them on high for 10 minutes and then slicing up with olive oil, pepper, sea salt and a sprinkling of feta.

UGH! I'm so sorry that I haven't been over here for a while, looks like I've missed out on a lot of fun. Your sewing and knitting projects are inspiring!

We have been feasting on veggies here too, although sadly, not through my own little garden, weather this summer has kept everything un-ripe. Sigh.
