I have been meaning to share with you our favorite, no fuss, no mess, Mexican dish that my mother has made for years.
If you are ever in the mood for Mexican, but you don't have a lot of time, this is the recipe for you. You can even double it, and stick on in the freezer.
1 pkg corn tortillas
1 lb ground beef or turkey burger (browned)
1 pkg cheddar cheese, or 1 8 oz block of cheese, grated (I highly recommend grating it yourself, I think it tastes so much better!)
sour cream
Layer all ingredients, except sour cream, in a casserole dish. Start with the sauce, top off with the cheese. Bake at 350 for 30-40 minutes. Serve with sour cream.

Corn Salad:
1 small bag frozen corn
1 can of black beans, drained really well
1/4 chopped purple onion
1/4 C. cilantro, chopped
Toss all ingredients, add a little olive oil, sea salt and vinegar.

Thank you, thank you! It's not unusual for us to snack daily on salsa and chips...sour cream those times we make nachos. This recipe looks delicious. I think I'll print it out for that next Mexican craving!

I too love Mexican food and my love for it increases every year. My mom has made a casserole similar to yours since I was small. I have changed mine to the green enchilada sauce and chicken, but the rest has stayed the same. Her secret (I sometimes use it too) is to add a can of cream of chicken soup which makes it creamy and thickens it up. Your dinner plate looks yummy!

I also LOVE Mexican food!! I used to live out in New Mexico and I miss the food (I don't miss the weight I gained 50lbs while I lived out there thankfully I lost it) Thanks for the recipes I will be sure to try the corn salad!!
Sounds like something I'd love! And I couldn't agree more about grating cheese. It DOES taste better that way. I've been telling my mom for years...but she just doesn't listen and always has a costco bag of frozen cheese in her freezer.

I lived in NM for 7 years and became a great fan of New Mexican food - which is like Mexican, but with green chiles smothered over everything. Oh, how I miss that!
Am I loosing my mind? I can't seem to find if you included the sauce in the recipe. This looks great and I would love to make it, but I can't seem to follow the recipe. I think I am loosing my mind! How many cans of sauce? Do you layer it like this...sauce, tortillas, meat, then cheese? do you only layer each once? or do you do it multiple times? Sometimes I wonder where my head is.
