Macaroon Kiss Cookies

I was flipping through some of my old magazines and found a yummy recipe - Macaroon Kiss Cookies. I have never been a fan of Macaroons, but since there is chocolate involved, I figured they were worth a try.

I really made them for Anna. She loves coc-it-nut (coconut) and will bypass chocolate any day for a coconut treat.
These are so easy, and so good. They stay soft and delicious. Since there are five cups of coconut in the recipe, I thought they might be a little dry, but I was wrong.
You must try these!
Macaroon Kiss Cookies:
1/3 cup butter, softened
3 0z. cream cheese, softened
3/4 cup sugar
1 egg yolk
2 tsp. orange juice
2 tsp almond extract
1 1/4 cups flour
2 tsp. baking powder
1/4 tsp. salt
5 cups sweetened coconut
1 bag chocolate kisses
Beat butter, cream cheese and sugar in large bowl until well blended. Add egg yolk, almond extract and orange juice, beat well.
Stir together dry ingredients, gradually add to batter mixture, beat until well blended. Stir in 3 cups of coconut.
Cover and refrigerate for an hour. Heat oven to 350. Shape dough into 1- inch balls and roll in remaining 2 cups of coconut. Place on ungreased cookie sheet.
Bake 10-12 minutes. Remove from oven and immediately press chocolate kiss into each cookie.

Those look amazing. I'd personally choose coconut over chocolate myself but with these ~ it's a no brainer. Thanks. Can't wait to try them

How funny it is when kids make up their own language.
Cookies look absolutely yummy, I just might make them although I am not a big fan of coc-it-nut.
