Recipes for you

When spring hits, I don't cook half as much as I do in the Fall or Winter. We try to have fast, but healthy meals. Pasta salad is a great thing to have on hand, especially for lunch. I can run inside, grab a few bowls, some fresh fruit and we are all set for a nice lunch outside.

My favorite combination lately is this:
1 lb. box of whole wheat, organic pasta, cooked and drained
1 package turkey pepperoni
1 orange bell pepper, 1 red bell pepper, chopped
1 cucumber, chopped
1 bottle of Newman's Own Organic Balsamic Vinaigrette
After pasta cools, add all ingredients.


Of course, after such a healthy lunch, you need to have a piece of this. Who can resist a fast, easy recipe for chocolate cake? This one is so good!

Deep Dark Chocolate Cake:
2 C. sugar
1 3/4 C. flour
3/4 C. cocoa
1 1/2 tsp baking soda
1 1/2 baking powder
1 tsp salt
2 eggs
1 C. milk
1/2 C. oil
2 tsp. vanilla
1 C. water

Heat oven to 350. Grease and flour 2 9" round pans. Combine dry ingredients in large bowl. Add all other ingredients, mix on med. speed for 2 minutes. Pour into pans, bake 30-35 minutes.

P.S. I made the cake yesterday, and it was even better today! Oh, and did you notice those yellow flowers! They are still around, after two weeks!

Oh my, your pasta salad looks so delicious! And would you believe, that is the exact same recipe I have used to bake chocolate cake for almost twenty years. It is the BEST!!!!! Loved all the prettiness in your last post too!!!!!

Yummy! We do a lot of rice salads and pasta salads in the summer as well. Anything that can be made ahead and keeps you out of the kitchen and out doors is great :)
