I made it the day before because it is even better if it sits over night.
1 can of refried beans
Guacamole (you can make your own, or buy the kind in the deli section)
Sour cream- about half a tub
Fresh Salsa -1 container
Grated cheddar cheese- about two cups
Olives- 2 small cans
1 bunch of scallions
Just layer all ingredients starting with the beans, ending with the scallions in a 9x13 baking pan. Serve with corn chips.
One question though, are you a dipper or a scooper?

A scooper! YUM! My mother and grandmother have a very similar recipe (it may actually be the same). Reading the list of ingredients immediately made me think of summer bbq's in my home town!

this looks delicious, and i would love to try making some, but have never heard of re-fried beans...I am sure we have something similar, if you could explain what they are...definately a scooper with a dip like that!

with that dip, i'm most definitely a scooper! I make one ver similar, except I mix some taco seasoning in with the cour cream. yum!

yum! those are all my favorite ingredients! in fact, when i have no time for lunch - or just want to sew - i cut an avocado in half, spoon salsa in the hallow, and eat with a spoon. I will be making this - and we will be scooping!
