We were all watching her show the other night when she made this cake.
My daughter is a huge fan of coconut so she made me promise to make it.
It has become a tradition that I make a cake, pie or cookies for the weekend and when it is gone, it is gone-until the next weekend.
This is the problem:
It is only Thursday.
Jack is taking a nap.
I am alone.
With this cake.
Just me....
and the cake.

I don't like coconut, but that is one pretty cake! It looks like it would be delicious...if you like coconut.
Cut out the middle and put the layers back together - no one will notice that it is shorter! :o) Not that I would EVER do anything like that, the thought just came to me....out of the blue....have no idea.....
Just a little sliver wouldn't hurt, would it? My mom used that recipe to make cupcakes a few months' ago. They were stupendous! Ina is awesome.
I've made this exact cake many times and our trick is to put it in the refrigerator overnight. It does something wonderful to the texture. It makes it a little more dense but oh, so good!

That is my most favorite recipe of hers. It is so good. I usually make cupcakes from the batter and serve at dinner parties. A perfect ending!
Oh my. That is a dilemma! I love to bake too. My hips also like it so I also must limit myself. I'm just not good with temptation!
Boy do I know that problem. Once I made a batch of cookies,chocolate chip ones, and it was me and them....
I ate them all waiting for the wee ones to get home from school. Ended up making another batch for them that very day. My husband still reminds me of my one time total indulgence and it has been more than 28 years since I ate that batch.
If you eat the cake,,, never and I mean never admit to it..
This made me crack up! I definitely feel for you. :) I have been finding myself in the same dilemma lately with the box of See's Candies I got for Christmas that's still going strong. Were you able to resist???
