These cookies have saved me. I started making treats like this a few years ago in an effort to stop eating so much sugar, and it has worked. Really worked. I still like to indulge in the real stuff, after all I am a human being, but most of the time I have something like this on hand to eat, while the rest of my family has their dessert. Are they as good as the real thing? Ummm, no, but they are good enough to leave you feeling satisfied and not wanting to shove Oreos in your mouth.
Healthy Chia Cookies:
core, peel and chop three medium apples (any fruit will do) and put in a small fry an over medium heat. As the fruit softens mash with a fork and add two tablespoons of Chia seeds and a squirt of lemon juice.
The fruit will thicken and have a jelly like consistency.
Dough: In a food processor or blender combine 1 1/2 cups of old fashioned oats, 3 tablespoons peanut butter, 12 medjool dates, and a tablespoon of almond milk. Mix until dough comes together in a ball- you may need to add more almond milk.
Roll dough into balls, press center with thumb and add jelly.
Makes about one dozen cookies. Store in refrigerator.
