Pumkin Bread


 If you are going to make pumpkin bread, muffins or cake this has to be your recipe.  Not only is it so delicious, it comes out of the pan like a dream every time.  Something that soothes my soul. 


 I made muffins last night and added two medium grated apples.  They were a huge hit this morning for breakfast and are almost gone.  My husband ate five.  He is kind of picky.  That is how good this recipe is. 

Pumpkin Bread, Muffins or Cake:
This recipe makes 3 loaves of bread, two dozen muffins, one 9x13 cake or you can use two 9" round pans for a layer cake.
May I make a few suggestions?
Add chocolate chips to the batter (don't be skimpy) and plop on some cream cheese frosting
Add raisins, dates, carrots and nuts (your kids will hate this.)
Add two grated apples and make an apple glaze using a half cup powdered sugar, a few tablespoons of apple juice and a dash of cinnamon.
You will enjoy caramel drizzled on top. After all, who does not enjoy a caramel drizzle?
Okay, enough fancy stuff, here is the recipe:

4 eggs
2/3 cup water
1 cup oil
1 15 oz. can pumpkin
31/3 cup flour
2 tsp. soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
pinch of ground clove
3 cups sugar

Beat eggs, add oil, water and pumpkin.  In a separate bowl sift all dry ingredients.  Make a well in center of dry ingredients and add pumpkin mixture.  Stir well. Turn into greased pans of choice. Bake at 400 for about 45 minutes.  Don't relay on this, always use the toothpick method!
